Potassium Metabisulfite powder is a wine additive used to kill wild yeast and bacteria, and it acts as a potent antioxidant, protecting both the color and flavors of wine.  "Meta" is a workhorse anti-oxidant and source of sulfur dioxide that comes as close to being mandatory use as any additive in winemaking.

1/4 teaspoon per 5 gallon batch yields about 40 to 45 ppm.

Available in several sizes- click here for smaller quantities of potassium metabisulfite.

 

Replace every 18 months and keep dry and out of direct sunlight.

Sodium metabisulfite is an alternative for amateurs, as it acts in the same way as potassium metabilsulfite, but US commerical wineries are legally not permitted to use the sodium metabisulfite.

Warning: Adding meta AFTER a wine has been cold stabilized may render the wine unstable once again.

Received this order. It was in a bag instead of the nice container shown. It appeared to be in a double bag, each of which I sealed after opening. As it turns out the inner bag was completely split at the bottom so that seal meant nothing (perhaps why it was in a second bag?) I lost some when I then transferred it to a proper container.
Not a good package.
